Shiitake.. did I pronounce it right?

Niagara Falls trip was amazing! But after two whole days of eating out for every meal, I really do miss home cooking ๐Ÿ˜ฆ As soon as I got home today, I called my parents, then made a really quick meal for dinner and tomorrow’s lunch for work.

<5 min Aubergine Stir-fry with Shiitake Mushrooms

Ingredients (for 1 serving):

  • 1 small Aubergine (Eggplant), quartered then diced
  • 3-5 Shiitake Mushrooms
  • Sliced Scallions (green onion)
  • Hemp Heart Seeds
  • Soy Sauce
  • 1 cup brown rice

Directions

  • Stir fry the chopped aubergine in a frying pan for about 2 minutes, then add mushrooms.
  • Add a few teaspoons of soy sauce to the frying pan
  • Serve with a side of rice, topped with the sliced scallion tops and hemp heart seeds (peanuts, or any kind of nut or seed also works really well!)

An Especially Exciting Friday

Happy Dance, Happy Dance, Happy Dance! I just realized the word “Happy” will be mentioned several times in this post.. so instead of annoying you with that word all throughout this post, I’ll just get it all out of my system now:

1) Happy Birthday Hai-Pei! Woo! 20!!
2) Happy Belated Birthday Joyce!
3) I got to cook salmon today.. and since I’m the biggest salmon fan.. this made me very happy ๐Ÿ™‚
4) Got an alarm set for 6am tomorrow..ย notย happy… but leaving for Niagara Falls to celebrate 2 birthdays for the weekend makes waking up that early on a saturday worth it ๐Ÿ˜‰

I was actually really excited to make this tarragon pasta dish that one of my co-workers inspired me to make, but when I opened the fridge today to take out the tarragon I had brought from home.. it had gone bad ๐Ÿ˜ฅ It’s on the top of my “to-make” list! I was too hungry to walk to Loblaws to get some groceries after getting home from work late, so I just used what I had already to make this Salmon dish.

Friday Salmon Dishย 

Ingredients (for 1 serving):

  • 1 salmon fillet
  • 1 cup corn kernels
  • 1/2 diced avocado
  • finely diced red onion
  • 1/2 diced tomato
  • parsley sprigs
  • Salt & Pepper
  • lemon juice

Directions:

  • Season the salmon fillet(s) with salt, pepper, and the juice of one lemon slice

  • I pan-fried the salmon, but if you have a grill, that would be even better! ๐Ÿ™‚
  • While the salmon is cooking, get the ingredients ready for the relish

  • I was pretty much weeping when cutting these… my eyes are definitely not immune to chopping onions yet..
  • Use as much of the onion as you’d like to add to the relish; I sauteed the rest as a side dish since I’m also a red-onion lover — when it’s cooked.

Then put it all on a plate and enjoy! ๐Ÿ™‚

Now it’s packing time for the weekend! I’m only going for 2 days.. but still.. ๐Ÿ™‚

I’m going with a group of girls that I met during dragon boating, and 2 university friends to celebrate their birthdays, and here’s a picture of us winning our gold and silver medals at the Race 2 weeks ago. We got split into 2 teams, so all of us either won either a first or second place medal in our division.. but I won’t tell you how many teams there were in our division.. ๐Ÿ˜‰
