Start of my summer 2012 : )

The start of my summer 2012 has been going great so far, really been enjoying the independence, but realizing just how much time and money goes into cooking/cleaning/grocery shopping alone.

So if you didn’t already know.. I have this thing with packing lunches.. among my favourite things to do, and for my first day at work, I packed a salad with salmon and mangoes. My manager ended up treating me to lunch that day so I saved it for dinner. It was so nice for her 🙂

So today I had a friend over for dinner, and by the time we finished cooking it was 10:30 pm.. but it was worth it : )

The finished dish! Lets call it…. Chicken-Ravioli-Goodness? It’s 12:18am, have no more creativity left in me to come up with a better name:p

-2 chicken breasts,
-Finely Chopped Red & Yellow Peppers,
-Parsley, Crushed Walnuts,
-Lemon Juice,
-Egg Whites

-Ravioli and Tomato Sauce : ) Nice & easy.

Mix together the peppers, walnuts, and parsley, and set it aside in a bowl. Dip the chicken breasts in the egg whites until it’s all covered, then roll in it the pepper-walnut-parsley mixture. Then place it on a tray, and put the remaining mixture on top. Lastly, squeeze some lemon juice over top. Bake at 375 degrees for 20-25 minutes, and it should be good! : ) In the meantime, boil the Ravioli, and heat up the tomato sauce in a frying pan with a little bit of butter.
