Winter Curry

I thought the name Winter Curry was pretty fitting, with the shredded coconut looking a little like snow, and all. I’ve been looking forward to today – It’s the end of the school week for me, which means I have some spare time to cook dinner!

Makes about 5 full servings

  • 1 large onion, chopped
  • 1 tbs utter
  • 1 1/2 heaping tbs of curry powder
  • 1 tbs of cumin
  • 1 tbs turmeric
  • 1/4 to 1/2 tsp of red pepper flakes (depending on how how you like it)
  • 4 to 5 cups of milk
  • Flour (Just keep adding a spoon at a time, until you get a nice, thin paste)
  • Chickpeas (amount equivalent to a can)
  • 2 chicken breasts
  • Rice (I prefer basmati rice.. cause it’s my favourite : )
  • Shredded, unsweetened coconut to taste
  • sliced bananas to taste
Cook & slice the chicken, and chop the onion!

Sauté the onion in a small pan and set aside once the onions are golden. In a large saucepan, add the butter, curry powder, cumin, and turmeric, red pepper flakes, and mix together while frying. Add the flour and milk bit by bit, and make sure you use a whisk to prevent clumps from forming. Once you have the perfect consistency, add the chicken, chickpeas, and onions : )

While the sauce and chickpeas are cooking, prepare your rice, then serve with shredded coconut and banana to taste.

I was a little skeptical about the bananas at first, but the flavours actually go SO WELL together! LoveLoveLove
