Early Morning

Last term, my first classes of the day were all at 1:00. This term, my first classes start at either 10:00 or 1:00. Spoiled. So today, when I had to be up by 7, I was pretty tired. But clearly, not too tired to take a picture of the clock to document this moment.. haha.

I’ve got a pretty long day at school today, 3 classes and a meeting with my OB group members after. A long school day calls for some sort of fuel-food. Apples?

Sautee the apples in a frying pan with a little butter, nutmeg, cinnamon, and brown sugar.

Just mix together rolled oats, water, and some milk to get the perfect consistency; then add the apples! : )

Packing a lunch the night before always saves lots of time in the morning! 🙂

Whenever I cook quinoa, I always remember my friends at work who thought it looked like fish eggs and would always make some comment about it. I put clementines, apples, cranberries, and dressing in mine; but really, you can put anything you want or have at the time. Any kind of fruit thrown in there ends up tasting really great.

What do you consider to be fuel food? : )
