Sisters ♥

I met Lauren over the summer, while we were both working at Ben Thanh. Work was so much fun on Friday evenings : ) We bonded instantly, and a lot of people there thought we were sisters! We had the same weird sense of humour, and would dance in the kitchen at the end of the day when nobody was looking ; ) We share so much in common!  We FINALLY got to hang out today, there was some dancing, singing, picture-taking, baking, and nature walking:)

We made some Chocolate-Dipped Espresso Shortbread Cookies, which turned out to be a complete fail the first time we tried it 😦 Half a cup of butter just seemed so… fattening! haha, but apparently if you put any less than half a cup, it turns out looking like.. sand. So we tried it again, and it was a success!


1 cup of butter
1/2 cup of sugar
1/2 tsp. table salt
2 and 1/4  cup flour
2 tbsp finely ground espresso coffee beans
*and some melted chocolate.. because chocolate makes everything better 🙂


Mix together the butter, sugar, and salt in a stand mixer bowl (using the paddle attachment). Mix on low speed until the butter combines with the sugar but isn’t perfectly smooth, 1 to 2 minutes. Add the flour and ground espresso and mix on low speed, scraping the bowl frequently, until the dough has just about pulled together, about 3 minutes; don’t overmix.

On a lightly floured surface, roll the dough to about 1/4 inch thick.

 Now the fun part! cut out shapes wit cookie cutters! (Or.. in our case, with a butter knife, and a metal saucer).
Bake the cookies at 300 degrees until golden on the bottom and edges are pale to golden on top, 30 minutes to 1 hour
 Then dip them in chocolate, and Voila! 🙂
After we finished baking, we went for a nature walk behind my house, and took some pictures! 🙂 The saddest thing is that I haven’t actually enjoyed this mini-forrest since I was.. in grade 2. So it was nice to be back out here again.
Halfway through our walk, Lauren had this genius idea to take out the tripod so we could take pictures of the both of us. There was a little mishap with the tripod.. note to self: the lock flips up.. not down. otherwise it will break:(
Too bad I had to catch a bus to go back to school at 4:30! 😥 I miss her already! No worries, another hangout is soon to happen! 🙂
